This is Lois' salad recipe - very delicious. Be sure to buy the best quality of ingredients possible.
Ingredients:
4 Tbl best quality organic olive oil
2 Tbl red wine vinegar (or raw apple cider vinegar)
1 Tbl Dijon mustard
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
A splash of agave nectar (to taste) or raw unfiltered honey
1 tsp chopped fresh parsley
1 tsp fresh lemon juice
2 cloves garlic, chopped or minced
1 avocado - cubed
4 cups mixed salad greens
1/2 cup cherry tomatoes, cut in half
1/2 cup celery, diced
1/2 cup sliced almonds
2 ounces feta cheese, crumbled
Whisk together the dressing ingredients (olive oil to garlic). Add to salad ingredients just before serving.
