Eat your colors

Think about color and presentation when preparing 100% real food meals because you can.  God has made so many beautiful foods in a variety of colors, real vibrant colors, that don't need any artificial dyes or flavors.

My lunch the other day started with reheating some whole pinto and Anasazi beans with yellow rice (both were in the refrigerator ready to use).  After heating, I added some freshly ground sea salt and black pepper.  Then I added some cilantro, asparagus, and chives that I had just harvested from the garden.  In the produce drawer in the refrigerator, I found an organic tomato that needed to be consumed and got out some homemade yogurt sauce.  Chopped up the veggies and herbs, placed in the bowl, and added a dollop of yogurt sauce.  If you or your family are not into so many fresh vegetables yet, start with the addition of just one colorful fresh food that you know you like.  Then experiment with another - soon you will reawaken your taste buds and be looking for others new things to try!

A simple, affordable, nutritious, quick lunch, with a beautiful palette of vibrant COLORs.  Try creating your own.
